Cooking without salt...kinda

Breakfast: 2 egg omlet with mushrooms, onions, cherry tomatoes, and ham. 

Cooked with a very small amount of sea salt.  Now I'm a flavor fiend, and bland food groses me out, but G (the husband) has a family history of kidney stones and he doesn't want me coking with salt.  Of course he's a sweet tea coniseur who knows the difference between sweet tea and sweetened tea.  It's the same way with food, there is a difference between food cooked with salt and salted food.  But alas, I think his potential extremely painful medical condition trumps my tastebuds so I'm trying to learn to cook without salt...or at least limit it :P

I'm not flaking already!

So I'm totally not flaking on this already! I was using my phone to take and upload the pictures and the touch screen went crazy so my phone wasn't functional. But I have the replacement phone now and starting tomorrow I'll start posting again!

Dinner: Chicken Fajitas

Yep, not the best dinner choice, but it's where the fam wanted to go so I tried to find something I could eat. So I went with Chicken Fajitas.

I figured:
Grilled Chicken is a +
Sauteed onion and bell pepper +
Refried beans is a - but I ate some anyway
Rice is a + despite what popular culture says but I didn't eat any
Guacamole is kinda a +/- because the main ingredient is avocado which is great for you.

Overall I think it was a good choice, and it was definitely tasty!

Parmesan Crusted Tilapia and Veggies



Parmesan Crusted Tilapia
1 frozen tilapia filet
1/2 teaspoon minced garlic
1/2 teaspoon Italian seasoning
1 teaspoon grated parmesan
1 tablespoon lemon juice

Bake frozen for 15 minutes in a 425 degree oven and it's done.

Veggies
1 bag of frozen Green Giant: Healthy Vision veggies.

Yummy lunch, I wonder what it would taste like with Greek yogurt instead of the lemon juice cause it was pretty tart.

Day 1, The New Me.

I use the excuse that I've been trying to figure out through looking at studies and reading books exactly what the ideal healthy lifestyle is and as such have not made the steps the change the way I am now into a healthy person. So here I go, no more delays! There's no day but today and this is the starting mark. One of the most basic tools in diet choices is a food diary, try as I might I can't seem to keep up with one, so what's one thing that'll keep me accountable and will help me keep track of what I'm eating? This blog! Since I always have my phone on me I'll be posting pictures of what I'm eating so I can keep track of it and it'll give me a layer of accountability since everyone will be able to see it. My goal has always been to be able to show people that you don't have to do a fad or crash diet or pills to get to your goal, just make healthy choices. So now you'll be able to see the choices I'm making and see if it makes a difference.

So here we go. My name is Melissa Crooks, I'm 24 years old and I am 251 pounds. My goal is to be 140 pounds or lighter and live a healthier more active lifestyle. Welcome to my journey.
